I call this keto egg salad the Easter egg salad because it reminds me of my childhood. Every year, my family would color eggs for Easter with food-friendly dyes and then have fun cracking them.

Of course, we ended up with a lot of eggs to eat, so my mom came up with this egg salad recipe. She used apple cider vinegar and olive oil instead of mayo, and added fresh basil and dill for extra flavor.

  • 6 medium eggs or 5 large egg (about 1 1/2 cups chopped)
  • 4 oz spring onions (about 1/2 cup sliced)
  • 9 oz cucumber (about 2 cups chopped)

Boil the eggs for 7-8 minutes, or until hard-boiled. You can use a pot of water on the stove, or an instant pot for faster and easier cooking. To peel the hard boiled eggs easily, transfer them to a bowl of cold water and let them cool completely.

Cut the lettuce and place it in a large bowl. The bowl should be big enough to fit all the ingredients, with the lettuce filling about 3/4 of it. You can use any type of lettuce you like, such as romaine, iceberg, or butter lettuce.

Cut the spring onions and layer them on top of the lettuce. Spring onions, also known as green onions or scallions, add a nice crunch and mild onion flavor to the salad. You can also use red onion, white onion, or chives instead.

Cut the cucumber and layer on top of the spring onions. Cucumber adds more crunch and freshness to the salad, and helps balance the richness of the eggs and dressing. You can peel the cucumber or leave the skin on, depending on your preference. You can also use other veggies, such as celery, bell peppers, or radishes.

Peel the hard-boiled eggs and cut them into quarters. Separate the egg whites from the egg yolks and place them in separate bowls. You’ll use the egg yolks to make the dressing, and the egg whites to add to the salad.
