Recipe Story

I call this keto egg salad the Easter egg salad because it reminds me of my childhood. Every year, my family would color eggs for Easter with food-friendly dyes and then have fun cracking them.

Of course, we ended up with a lot of eggs to eat, so my mom came up with this egg salad recipe. She used apple cider vinegar and olive oil instead of mayo, and added fresh basil and dill for extra flavor.

It was always a hit with everyone, and I still make it to this day.

Instructions How to Make Keto Egg Salad

Keto Egg Salad

Boil the eggs for 7-8 minutes, or until hard-boiled. You can use a pot of water on the stove, or an instant pot for faster and easier cooking. To peel the hard boiled eggs easily, transfer them to a bowl of cold water and let them cool completely.

Cut the lettuce and place it in a large bowl. The bowl should be big enough to fit all the ingredients, with the lettuce filling about 3/4 of it. You can use any type of lettuce you like, such as romaine, iceberg, or butter lettuce.

Cut the spring onions and layer them on top of the lettuce. Spring onions, also known as green onions or scallions, add a nice crunch and mild onion flavor to the salad. You can also use red onion, white onion, or chives instead.

Cut the cucumber and layer on top of the spring onions. Cucumber adds more crunch and freshness to the salad, and helps balance the richness of the eggs and dressing. You can peel the cucumber or leave the skin on, depending on your preference. You can also use other veggies, such as celery, bell peppers, or radishes.

Peel the hard-boiled eggs and cut them into quarters. Separate the egg whites from the egg yolks and place them in separate bowls. Youโ€™ll use the egg yolks to make the dressing, and the egg whites to add to the salad.

Keto Dressing

To make the keto egg salad dressing, crush the egg yolks with a fork or a potato masher. Add the apple cider vinegar, olive oil, and salt and whisk until smooth and creamy.ย

This dressing is a low-carb alternative to mayo, and has a tangy and savory flavor. You can also add some mustard, lemon juice, or garlic powder for more zing.

To assemble the keto egg salad, arrange the egg whites on top of the cucumber slices. Spoon the dressing over the egg whites, and spread it evenly.ย

You can use as much or as little dressing as you like, depending on how creamy you want your salad.

Q: How can I make this egg salad more creamy and rich?

A: If you want to make this egg salad more creamy and rich, you can add some avocado to the dressing. Avocado is a great source of healthy fats and fiber, and it also adds a smooth and creamy texture to the salad. You can use a food processor to blend the avocado with Greek yogurt, sour cream, and mustard, or mash it with a fork and mix it by hand.

Q: Can I add extra mayo to this keto egg salad recipe?

A: Yes, you can add extra mayo to this keto egg salad recipe if you like a creamier and richer texture. However, you should use sugar-free mayo, as regular mayo contains added sugar and other ingredients that are not keto-friendly. You can either buy sugar-free mayo from the store, or make your own at home with some oil, eggs, vinegar, and salt. You can also add some lemon juice, garlic, or herbs for more flavor. Just be careful not to add too much mayo, as it will increase the carb intake and calories of the salad. You can also try adding some creamy avocado or sour cream for a similar effect.

Q: What is deluxe egg salad?

A: Deluxe egg salad is a term used to describe egg salad that has some extra ingredients or toppings to make it more special and tasty. For example, you can add some cheese, bacon, ham, olives, pickles, or nuts to your egg salad to make it deluxe. You can also use different kinds of herbs, spices, or dressings to give it more flavor and variety.

Q: Do I need to use whole eggs for this recipe?

A: Yes, you need to use whole eggs for this recipe, as you will use both the egg whites and the egg yolks. The egg whites add protein and texture to the salad, while the egg yolks are used to make the dressing. You can use any size of eggs you like, but large eggs are recommended for this recipe.

Q: Do I need to use fresh eggs for this recipe?

A: Yes, you need to use fresh eggs for this recipe, as they will have better flavor and quality. Fresh eggs are also easier to peel after boiling, as older eggs tend to stick to the shell. You can check the freshness of your eggs by placing them in a bowl of water. If they sink to the bottom, they are fresh. If they float to the top, they are old and should be discarded.

Q: Can I add avocado to this keto egg salad recipe to make keto avocado egg salad?

A: Avocado is a delicious and nutritious ingredient that can make your keto egg salad even more creamy and satisfying. You can add avocado to this recipe in two ways:

  • You can blend some avocado with the sour cream or cream cheese and dijon mustard to make a smooth and creamy dressing for the salad. This will give your salad a nice green color and a rich flavor.
  • You can chop some avocado and toss it with the chopped eggs and dressing. This will add some extra texture and healthy fats to your salad. You can also sprinkle some lemon juice over the avocado to prevent browning and add some freshness.
