Keto Ice Cream Sandwich – tips how you can make sure you make the tastiest Keto Ice Cream Sandwiches
Have you tried making keto ice cream in the past and it turned out like ice brick instead of a nice, smooth and silky texture?
Yes, I know, that’s so common with the keto and sugar-free ice cream recipes. BUT this one is NOT one of them. The texture of these sugar-free Ice Cream Sandwiches is so silky and nice, that you wouldn’t guess that’s a low carb ice cream at all.
The reason why the most keto ice creams are like ice brick is that the “normal” sugar has abilities that the most sweeteners (alternative natural sugar) don’t have.
How do we go around this then?
The secret ingredients are 2 in this low carb ice cream.
The first one is the sweetener Xylitol.
In short, Xylitol is categorized as sugar alcohol. Alcohol, in general, stops any liquids from freezing. So, instead of using another sweetener and alcohol, I opted to use Xylitol. Don’t worry, it’s sugar alcohol nut NOT alcohol, so it’s safe for children.
Another keto-friendly sweetener, that has similar qualities, is Allulose. Here, in the UK, it’s very expensive and difficult to find. However, it’s easily accessible in USA and Canada.
The second secret ingredient is Xanthan Gum.
Xanthan gum is a magic ingredient used to emulsify and thicken dressings and bind together gluten-free flours. It was first developed in the 1950s — grown from fermented plant bacteria— and has broad commercial use and is a key ingredient in molecular cooking and gluten-free cookery.
In our keto ice cream recipe, xanthan gum helps to make the texture silky and smooth. It binds the ingredients and it’s not letting them freeze and form the ice brick like some other low carb recipes.

Tip 1: As explained above, do not skip the two secret ingredients so you make tasty keto ice cream sandwiches.
Tip 2: When you are freezing the cookie dough and the sandwiches, in the end, make sure you wrap them tightly with cling film or you place them in an air tight container. The moisture from the freezer may cause the formation of icicles.
Tip 3: NET CARBS: I made 6 sandwiches as I didn’t have smaller muffin forms at the time. You can use smaller muffin forms and make 12 keto sandwiches. That will help to reduce the size and the net carbs per sandwich.
