I get it, that happens a lot with keto and no-sugar-added ice cream recipes. But this one is different. The texture of these no-sugar-added Ice Cream Sandwiches is so soft and delicious, that you wouldn’t believe it’s a low-carb ice cream.
The reason why most keto ice creams turn out like ice blocks is that regular sugar has properties that most sweeteners (natural sugar alternatives) don’t have.
The Secret Ingredients For Low Carb Ice Cream
The first one is the sweetener Xylitol.
In short, Xylitol is categorized as sugar alcohols. Alcohol, in general, prevents any liquids from freezing. So, instead of using another sweetener and alcohol, I chose to use Xylitol. Don’t worry, it’s sugar alcohol but NOT alcohol, so it’s safe for children.
Another keto-friendly sweetener, that has similar properties, is Allulose. Here, in the UK, it’s very expensive and hard to find. However, it’s easily available in the US and Canada.
The second secret ingredient is Xanthan Gum.
Xanthan gum is a magic ingredient used to emulsify and thicken dressings and bind together gluten-free flours. It was first developed in the 1950s — grown from fermented plant bacteria— and has wide commercial use and is a key ingredient in molecular cooking and gluten-free cooking.

In our keto ice cream recipe, xanthan gum helps to make the texture smooth and creamy. It holds the ingredients together and prevents them from freezing and forming the ice block like some other low-carb recipes.

Keto Ice Cream Cookie Layer
In a bowl, combine almond flour, cocoa powder, sweetener, and salt.
Mix well until combined, making sure there are no lumps.
Add the melted peanut butter to the dry ingredients and mix until well combined. You may need to do it by hand.
Divide the dough into 12 equal parts (6 for the top layer and 6 for the bottom layer).
Place 6 dough parts into 6 muffin pans or any pans you have.
Freeze for at least 15 minutes while you prepare the ice cream layer.
Keto Peanut Butter Ice Cream Layer
Place in a food processor the heavy cream, xylitol, vanilla extract, xanthan gum and salt and mix well until thick but still soft consistency.
Add the peanut butter to the cream mixture and mix until fully combined.
Pour the ice cream mixture over the cookie dough layer (6 equal parts).
Place the remaining 6 dough parts on top of the ice cream mixture.
