Start by getting a microwave-safe mug for your recipe. It’s important to choose a coffee mug that is wide and shallow enough to allow your cake to cook evenly all the way through. You can use small ramekin as well.
I use this mug.
To ensure a light and well-risen cake, first mix together the coconut flour and the baking powder in your chosen mug. This dry mixture ensures even distribution of the baking powder, helping your cake to rise evenly.
Next, add in the Swerve, egg, vanilla extract, melted coconut oil, and desiccated coconut. These will make up the wet section of your ingredients.
Mix the wet ingredients and dry ingredients together using a fork or a mini whisk, ensuring all ingredients are thoroughly combined. To gain a light and fluffy mug cake, avoid over-mixing as this can result in a dense cake. The aim is to just combine the ingredients, so stir gently until you can’t see any dry flour.
Next, stir the chopped fresh strawberries into the mixture. You can also use frozen strawberries, but make sure to increase the microwave time slightly since they can make the batter wetter. If the mixture is too thick, add a little bit more melted coconut oil but no more than a teaspoon.
A critical factor in achieving a moist mug cake is preventing overcooking. Set your microwave on high and microwave your mug cake for about 1 minute and 30 seconds. However, as microwave strengths can vary, it’s wise to initially check the mug cake after 1 minute.
How to Check Your Cake
Perform a quick test to determine if your mug cake is done. At the end of your cooking time, insert a toothpick into the center of the cake. If it comes out clean, your cake is done. If there’s batter on the toothpick, give your cake another 10 to 15 seconds in the microwave before performing the toothpick test again.

If you are not fond of Swerve or if it’s not available, you could use alternative keto sweeteners such as stevia or erythritol. - Desiccated Coconut: you can omit it if you do not like coconut.
