Begin the low carb mug cake recipe by gathering all the necessary ingredients – the full list is in the recipe card below.

First, grab a microwave-safe mug or a small bowl to prepare your cake. Mix the dry ingredients, which include coconut flour, Swerve, Himalayan salt, and baking powder.

Next, add the wet ingredients to the mix, including a medium-sized egg that is at room temperature. 

Crack the egg into the mug, ensuring there are no shell fragments. With the egg, add the vanilla extract. 

Then, add the melted coconut oil.

Lastly, mix in the creamy peanut butter. Be sure to mix well until everything is combined into a smooth batter. Ensure there are no lumps and everything is uniformly combined. 

Optional: In addition of peanut butter, you can add sugar-free chocolate chips or pieces of dark chocolate if you prefer a chocolate peanut butter mug cake.

Once the peanut butter mixture is ready, microwave it. The appropriate time would range from 60-90 seconds, depending on your microwave’s wattage.

Step back and watch your mug cake bake quickly and efficiently in the microwave.

Monitor your coconut flour mug cake’s progress by watching it rise in the microwave. If it starts to spill over, stop the microwave, let the cake settle, and then continue cooking.

  • 1 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1 tbsp Swerve
  • 1 pinch Himalayan salt
  • 1 egg
  • 1 tbsp coconut oil
  • 1 tbsp peanut butter
  • 1 tbsp peanuts
  • 1/2 tsp Vanilla extract
