This low-carb pizza crust is based on my very popular original recipe for viral cottage cheese flatbread recipe! I wanted something simple yet delicious that could satisfy my pizza cravings without the guilt. 

With just cottage cheese and eggs, this crust is not only easy to make but also packed with protein. It’s become a staple in my meal prep routine, and I can’t wait for you to try it!

You can even make two at once and/or make ahead and store in the fridge and add toppings later. It stores in the fridge great too as a meal prep if you want to make and store. Lots of options.

Cottage Cheese Flatbread Pizza Margherita: High Protein Keto

Ingredients

Pizza Crust Main Ingredients:

  • full-fat cottage cheese
  • whole eggs (room temperature)

Optional:

  • onion powder
  • garlic powder
  • bagel seasoning
  • Italian seasoning

Toppings Idea:

  • fresh mozzarella cheese
  • tomato sauce (swaps: pizza sauce or sugar-free marinara sauce)
  • basil leaves

High Protein Cottage Cheese Pizza Crust

Instructions

Blend the Ingredients: Add all pizza crust ingredients (cottage cheese, eggs, garlic powder, and Italian seasoning) into a immersion blender or food processor. Blend until smooth and creamy texture. This process improves the texture of the cottage cheese mixture.

Prepare the Baking Tray: Pour the mixture (pizza dough) onto a pizza tray or prepared baking sheet (lined with greaseproof paper or a piece of parchment paper). If using parchment paper, spray it with cooking spray to prevent sticking.

Bake the Crust: Cook the pizza base in a preheated oven at 400°F (200°C) for 7-10 minutes, or until it starts to turn golden brown.

Add Toppings: Remove the cottage cheese pizza crust from the oven and arrange your favorite toppings. Spread the tomato sauce, place slices of fresh mozzarella cheese, and add basil leaves.

Final Bake: Return the pizza to the oven and cook for another 5-7 minutes, or until the cheese is melted and bubbly.
