How I Discovered This Recipe

I love ice cream, but I don’t love the sugar, fat, and calories that come with it. I also follow a low-carb keto diet (more like a lifestyle now), which means most store-bought ice creams are off-limits for me. So I’m always experimenting with ice cream recipes so I can make my own ice cream at home, using healthier ingredients that fit my macros.

I’ve tried many different recipes for homemade ice cream, but none of them were as easy and delicious as this one.

I saw someone on TikTok make the viral cottage cheese ice cream a few months ago but I never tried it. I was skeptical about the result.

I was craving ice cream but I didn’t have any ready. I only had some leftover cottage cheese and blueberries in my fridge. I decided to blend them and freeze them, to see what would happen. To my surprise, the result was amazing: a smooth, creamy, and refreshing ice cream that tasted like blueberry cottage cheesecake ice cream.

Ingredients

To make this blueberry cottage cheese ice cream, you’ll need the following ingredients:

Cottage cheese. This is the base of the ice cream, and it provides protein and creaminess. I recommend using full-fat cottage cheese for the best texture and flavor.

Fresh Blueberries. These are the main flavors and colors of the ice cream, and they also provide antioxidants and fiber. You can use fresh or frozen blueberries, but I recommend fresh berries.

Optional ingredients. You can also add some vanilla extract, lemon zest, or sweetener of your choice to enhance the flavor of the ice cream. You can add some maple syrup, graham crackers, chocolate chips, or nuts for some crunch and texture.

Tips and Tricks

Here are some tips and tricks to make the best blueberry cottage cheese ice cream:

  • If you don’t have a blender, you can also use a food processor or an immersion blender to make the ice cream mixture.
  • If you want a softer and creamier texture, you can take the protein ice cream out of the freezer about 10 minutes before serving and let it soften slightly at room temperature.
  • If you want a firmer and more scoopable texture, you can freeze the ice cream for longer, or use an ice cream scoop dipped in hot water to make nice round scoops.
  • You can store the ice cream in a safe airtight container in the freezer for up to a month, but it’s best to enjoy it within a week for the best quality.

Frequently Asked Questions (FAQ)

Here are some frequently asked questions about this blueberry cottage cheese ice cream recipe:

Q: What does cottage cheese ice cream taste like?

A: Cottage cheese ice cream tastes like a cross between traditional ice cream and cheesecake. It has a smooth and creamy texture and a tangy and sweet flavor. You can create different flavors and combinations depending on the fruits and toppings you use.

Q: Can I use other fruits instead of blueberries?

A: Yes, you can use any fruits you like instead of blueberries, such as fresh strawberries, raspberries, etc. Just make sure they are ripe and sweet.

Q: Can I use creme fraiche instead of cottage cheese?

A: Yes, you can. The texture and flavor of the ice cream may be slightly different, but it will still be delicious. Check my keto ice cream recipes with creme fraiche below:

Q: Can I use Greek yogurt instead of cottage cheese?

A: Yes, you can use greek yogurt instead of cottage cheese, but the ice cream will have a different texture and flavor. Greek yogurt is thicker and tangier than cottage cheese, so you may need to add more sweetener and liquid to balance it out. You may also need to churn the ice cream in an ice cream maker to prevent it from becoming too icy.

Q: Can I make this ice cream vegan or dairy-free?

A: Yes, you can make this ice cream vegan or dairy-free by using a plant-based cottage cheese or cream cheese alternative, such as tofu, cashew, or almond. You may also need to adjust the sweetness and flavor to your liking.

Q: Sour cream vs cottage cheese: difference between sour cream and cottage cheese

A: Sour cream and cottage cheese are both dairy products made by curdling milk with acid, but they have different textures, flavors, and nutritional profiles. Sour cream is smooth, creamy, and tangy, while cottage cheese is chunky, mild, and fresh. Sour cream has more fat and calories than cottage cheese, but cottage cheese has more protein and calcium.

Q: Does cottage cheese have probiotics?

A: Yes, cottage cheese has probiotics, which are beneficial bacteria that help with digestion and gut health. However, not all cottage cheese products contain live probiotics, so you need to check the label for the words “live cultures” or the names of specific probiotic strains, such as Lactobacillus acidophilus or Bifidobacterium.

Q: Cottage cheese vs cream cheese: How does cottage cheese compare to cream cheese?

A: Cottage cheese and cream cheese are both soft cheeses, but they are made differently and have distinct characteristics. Cottage cheese is made from curdled milk that is drained and rinsed, while cream cheese is made from cream that is blended and stabilized. Cottage cheese has a curdled texture and a mild flavor, while cream cheese has a smooth texture and a sweet flavor. Cottage cheese is lower in fat and calories than cream cheese, but higher in protein and calcium.
