I have a confession to make: I’m a dessert lover. I can’t resist a good cake, cookies, or ice cream. But as you know, most desserts are loaded with sugar, carbs, and gluten, which are not good for our health or our waistline.

That’s why I’m always looking for ways to make keto-friendly desserts that taste just as good, if not better, than the regular ones.

Then you can break the bark into pieces and enjoy.

What is Yogurt Bark?

Yogurt bark is a frozen treat that is made by spreading yogurt on a baking sheet, adding various toppings, and freezing it until firm. Then, it is broken into pieces and enjoyed as a snack or dessert.

Yogurt bark is easy to make, customizable, and nutritious. It can be made with different types of yogurt, such as Greek, plain, or coconut, and different toppings, such as fresh fruit, nuts, granola, and chocolate chips.

Yogurt bark is a great way to use up leftover yogurt, satisfy your sweet tooth, and cool down on a hot day.

Ingredients for Keto Peanut Butter Brownie Yogurt Bark

1 cup full-fat Greek yogurt: This is the base of your keto frozen yogurt bark. Greek yogurt is a low-calorie and high-protein snack that offers probiotics and calcium. It also has a creamy texture and tangy flavor. It goes well with peanut butter and brownie. You can use regular natural yogurt if you are not following a keto diet, but make sure to choose a plain and unsweetened variety. I sometimes substitute it with creme fraiche as it’s milder in taste and creamier.

2 tbsp 100% natural peanut butter: This is the star of your keto peanut butter bark. Peanut butter is a keto-friendly ingredient that provides healthy fats, protein, and fiber. It also has a crunchy and nutty flavor that adds texture and contrast to your frozen yogurt bark. You can use any keto-friendly peanut butter of your choice, but make sure to check the label for the ingredients and the net carbs. Some peanut butters may contain added sugar, salt, or oil that can affect the taste and the nutrition of the recipe.

1 tbsp Swerve: This is the sweetener of your keto frozen yogurt peanut butter and brownie bark. Swerve is a keto-friendly sweetener that tastes and measures like sugar, but has zero calories, zero net carbs, and zero glycemic index. It also does not have any bitter aftertaste or cooling effect that some other keto sweeteners may have. You can use any keto-friendly sweetener of your choice, such as erythritol, monk fruit extract, stevia, or allulose. However, some sweeteners may have different sweetness levels and conversion ratios, so you may need to adjust the amount accordingly.

Half a keto mug brownie: This is the topping of your keto frozen yogurt peanut butter and brownie bark. Keto mug brownie is a quick and easy dessert that you can make in the microwave with a few keto-friendly ingredients.

It has a rich and fudgy texture and a chocolatey flavor that complements the yogurt and peanut butter. You can use any keto brownie mix or recipe of your choice, but I recommend using my keto mug brownie recipe for the best results.

It is easy, quick, and delicious, and it makes the perfect amount of brownie for this recipe. You can also make it ahead of time and store it in the fridge or freezer until you are ready to use it.

Instructions How To Make Yogurt Bark With Peanut Butter and Brownie

To make this keto frozen yogurt bark recipe, you will need a baking sheet, parchment paper, two small bowls, a microwave, a whisk, a knife or a toothpick, and a freezer. Start by lining the baking sheet with parchment paper. This will prevent the bark from sticking to the pan and make it easier to remove later.

Next, prepare the peanut butter and sweetener mixture. In a small bowl, microwave the peanut butter for about 15 seconds, or until slightly melted and runny. Add the Swerve or any keto-friendly sweetener of your choice and whisk until well combined. This will sweeten the peanut butter and make it easier to drizzle and swirl over the yogurt.

Then, prepare the peanut butter yogurt mixture. In another large mixing bowl, add the room temperature Greek yogurt and half of the peanut butter and sweetener mixture. Whisk until well combined. This will create a creamy and tangy base for your keto yogurt bark.

Now, spread the yogurt and peanut butter mixture evenly over the prepared baking sheet, leaving some space around the edges. You want the bark to be about 1/4 inch thick. Drizzle the rest of the peanut butter and sweetener mixture over the yogurt, and swirl it with a knife or a toothpick to create a marble effect. You can use more or less peanut butter depending on your preference.

Finally, add the keto brownie pieces. Cut the keto mug brownie into small pieces, or crumble it with your fingers. You can use any keto brownie mix or recipe of your choice, but I recommend using my keto mug brownie recipe for the best results. Sprinkle the brownie pieces over the yogurt and peanut butter layer, and gently press them into the mixture. You can also add some chocolate chips, nuts, seeds, or fruit for extra flavor and crunch.

Freeze the bark for at least 2 hours, or until firm. You can also freeze it overnight if you want to make it ahead of time. Break the bark into pieces and enjoy. You can store the leftovers in an airtight container in the freezer for up to a month.
