Blend lemon layer: Blend cottage cheese, lemon juice, zest, sweetener, and guar gum (if using) until smooth. Stir in lemon slices.
Assemble in molds:
- For split pops: Fill halfway with one flavor, freeze 30–45 min, then add second flavor and your wooden popsicles sticks.
- For layered variety: Alternate which layer goes first in each mold for fun.
Freeze solid: Freeze 4–6 hours or overnight until fully set.
