Creamy, fruity, high-protein keto popsicles made with cottage cheese and no added sugar—perfect summer treat!

Instructions

  • Blend cottage cheese, strawberries, sweetener, and guar gum (if using) until smooth. Stir in sliced strawberries.
    ½ cup full fat cottage cheese, ½ cup strawberries, 1½ tablespoons powdered allulose, 1 pinch guar gum
  • Blend cottage cheese, lemon juice, zest, sweetener, and guar gum (if using) until smooth. Stir in lemon slices.
    ½ cup full fat cottage cheese, 1½ tablespoons lemon juice, 1 teaspoon lemon zest, 1½ tablespoons powdered allulose, 1 pinch guar gum
  • For split pops: Fill halfway with one flavor, freeze 30–45 min, then add second flavor and your wooden popsicles sticks.
  • For layered variety: Alternate which layer goes first in each mold for fun.
  • Freeze 4–6 hours or overnight until fully set.
  • Run molds under warm water 10–15 seconds to release.

Notes

  • These popsicles are super creamy, thanks to the cottage cheese, no icy texture here!
  • Don’t skip the lemon zest! It adds that punchy lemonade flavor without extra carbs.
  • Want them sweeter? Taste your mixture before freezing and adjust with more allulose or your favorite keto sweetener.
  • If you don’t have popsicle molds, use small paper cups and popsicle sticks instead.
  • To release the pops easily, run warm water over the mold for 10–15 seconds.
  • For fun texture, add thin slices of fresh strawberry or lemon right before freezing.
