As much as I love my Almond Flour Waffles with Whey Protein Powder, I was still on a mission to find the perfect low carb, high protein base with a fluffier and lighter texture. And friends, this is the keto waffle recipe I keep coming back to.
This cottage cheese waffle recipe took a few tests to get right, and here’s why: the batter can be a bit moody. Cottage cheese isn’t always consistent, some brands (or even different batches) have more water than others, so the thickness of the waffle batter needs tweaking each time. - Preheat your waffle maker or waffle iron and lightly grease if needed. Pour in about ¼ cup of batter and cook for 3-4 minutes, or until golden brown and set. Repeat with the remaining batter.
