This flourless Keto bread recipe is straightforward and quick to make. Keto banitsa is a very popular Eastern European (Bulgarian) recipe that can be used for Keto breakfast or even Keto snacks on the go. It can be eaten hot or cold. It can also be used instead of Keto bread in addition to your Keto lunch or Low carb dinner meal.
What Is Banitsa And Where It Comes From?
Banitsa is a traditional Bulgarian pastry that is typically made with phyllo dough, eggs, and cheese, and is often enjoyed as a breakfast or snack food. The history of banitsa can be traced back to the medieval period in the Balkans, where it was commonly made in rural households as a way to use up leftover ingredients. Over time, banitsa became a popular dish throughout Bulgaria and is now a beloved part of the country’s culinary heritage. Today, banitsa can be found in a variety of different flavors and variations, including vegetarian and meat-filled versions.

How To Make Banitsa Keto Friendly?
If you’re a fan of Greek and Bulgarian cuisine, or you want to try something new and different, chances are you’ve heard of Banitsa. This delicious pastry is usually made with layers of phyllo dough, feta cheese, and eggs. But for those of us who are following a low carb or keto diet, traditional Banitsa is a no-go due to its high carb content. Fortunately, I’ve come up with a recipe for a low carb, gluten-free, and keto-friendly version of Banitsa that’s just as delicious as the original.
The most important rule for Keto recipes – minimal carbs. Well, how could this be achieved? It is pretty simple.
First things first, let’s talk about what makes this keto banitsa recipe so special. Unlike traditional banitsa, which is made with a wheat-based pastry dough, this recipe is completely flourless. That means that it’s not only low carb, but also gluten-free and perfect for anyone who needs to avoid wheat or other grains.
So, what’s the secret to making this delicious flourless bread recipe? The answer is simple: cheese! This keto bread recipe is made with a mixture of grated cheddar and feta cheese, which helps to give it a light and fluffy texture while also adding plenty of flavor.
The secret to this recipe is to ditch the phyllo dough altogether and replace it with a mixture of psyllium husk and cheeses. These ingredients not only give the Banitsa a hearty, cheesy flavor but also make it gluten-free. The filling is made with eggs, feta cheese, and cheddar cheese to give it that authentic Mediterranean taste.

How To Make The Ultimate Low Carb Keto Banitsa Recipe?
To make the keto banitsa recipe, start by preheating your oven to 430°F (220°C). Then, combine all of the ingredients below in a mixing bowl. Mix well until everything is fully combined and you have a smooth mixture.
Ingredients:
- 4 Medium eggs
- 3 Teaspoons Psyllium husks
- 3.5 oz Creme fraiche or yogurt
- 1⁄2 Teaspoon Baking powder
- 3.5 oz Feta cheese
- 1.75 oz Cheddar cheese
Leave the keto dough to rest for 10 to 15 minutes in a room temperate. If the room is cool, you may add further resting time. It will thicken slightly and looks a lot more like dough.
Next, line a baking sheet with parchment paper and spread the dough out into a thin, even layer. Bake the keto bread recipe for 12-15 minutes or until it’s golden brown and slightly crispy around the edges.

Let cool for a few minutes before slicing and serving. You can eat it warm or cold.

How And What With To Serve Keto Banitsa?
This low carb keto Banitsa is perfect for breakfast, lunch, or dinner. You can enjoy it on its own or serve it with a side salad for a complete meal. The best part? You don’t have to worry about the guilt that comes with indulging in traditional Banitsa, thanks to this flourless and gluten-free version. Give this recipe a try and let us know how you like it!
Cold savory keto snack on the go or in the office: Place it in a container or wrap it in foil and take it with you to work.
Fancy a quick keto dessert? Why not sprinkle a little bit of a keto friendly sweetener (ideally powdered)? My mother adds a little bit of lemonade in the traditional banitsa recipe and it tastes sweet and savory and it’s so satisfying. That’s how I came up with the idea of sprinkling a bit of sweetener on top of the keto banitsa or sipping lemonade while enjoying this low carb snack.
What about having keto banitsa to go with your keto dinner? As this gluten free banitsa tastes similar to bread, you can use it like keto bread or even keto wraps (if you spread the keto dough very thin).
In conclusion, this keto banitsa recipe is a delicious and healthy way to indulge in a tasty snack without compromising your low carb or keto diet. With its light and fluffy texture and rich, savory flavor, it’s sure to become a favorite in your recipe collection. So why not give it a try today and see for yourself just how delicious keto cooking can be!
