  • Blend strawberry layer: Blend cottage cheese, strawberries, sweetener, and guar gum (if using) until smooth. Stir in sliced strawberries.
  • Blend lemon layer: Blend cottage cheese, lemon juice, zest, sweetener, and guar gum (if using) until smooth. Stir in lemon slices.
  • Assemble in molds:
    • For split pops: Fill halfway with one flavor, freeze 30–45 min, then add second flavor and your wooden popsicles sticks.
    • For layered variety: Alternate which layer goes first in each mold for fun.
  • Freeze solid: Freeze 4–6 hours or overnight until fully set.
  • Unmold: Run molds under warm water 10–15 seconds to release.
