These bars are absolutely amazing! The lemon flavor is so fresh and vibrant, and the texture is creamy and satisfying. I love that they’re high in protein and low in carbs—perfect for my sweet tooth without the guilt. Definitely keeping this on repeat for summer treats.

  2. Hi, I am defo going to make this scrummy lemon bar. My question is about sweeteners, what do you make of allulose? Which is your favourite? Have you written any articles on this hotly debated topic of sweeteners on Keto?

    1. Hi Kim!

I’m so glad you’re going to try the lemon bars. They’re one of my absolute favorite no-bake treats for the summer! So creamy and zesty!

Sweeteners are such a hot topic in keto, and honestly, it’s all about personal preference. I haven’t written a full article on this yet (but I should, thanks to your question!). My go-to sweeteners are Swerve and Stevia (I usually use Truvia). They work well for me and don’t leave that weird aftertaste I get from others. But again, everyone’s taste buds are different!

Allulose is great, especially in recipes like ice cream or sauces, where you want a smooth, soft texture. It doesn’t crystallize like erythritol does. On the other hand, Swerve is perfect for cookies or crusts where you want a bit more firmness or crunch.

I’d love to hear how your bars turn out!
