Do you love pumpkin spice lattes but hate the sugar and carbs? Then you’ll love this keto pumpkin spice latte mug cake that you can make in your microwave in just 5 minutes. It’s moist, fluffy, and full of warm spices and coffee flavor. Plus, it’s gluten-free, dairy-free, and only has 5 grams of net carbs per serving.
Get Recipe Ingredients
In a large microwave-safe mug, combine 3 tbsp of almond flour, 1/4 tsp of baking powder, 1 tbsp of Swerve, and a pinch of salt. Whisk well with a fork until no lumps remain.
Add 1 egg, 1 tbsp of melted coconut oil, 2 tsp of pumpkin puree, 1 tsp of pumpkin pie spice, and 1 tbsp of instant espresso. Mix well until smooth and well combined.
Microwave the mug cake for 90 seconds or until a toothpick inserted in the center comes out clean. Be careful not to overcook it or it will become dry.
Top the mug cake with 2 tbsp of pumpkin spice mousse and sprinkle some cinnamon for decoration. Enjoy your keto pumpkin spice latte mug cake while it’s warm and fluffy.

- If you don’t have instant espresso, you can use instant coffee instead. You can also omit it if you don’t want the coffee flavor.
- You can store the leftover mug cake in an airtight container in the refrigerator for up to 3 days. You can reheat it in the microwave for 15 seconds before serving.
