Instructions

  • Blend the Cottage Cheese: Start by blending the cottage cheese in a food processor until it’s smooth and creamy. This will be the base of your energy balls.
  • Mix the Ingredients: Add the pumpkin puree, coconut flour, pumpkin pie spice, and Swerve to the food processor. Blend everything together until well combined. The mixture should be thick and sticky.
  • Scoop the Mixture: Use a measuring teaspoon to scoop out equal amounts of the mixture. Roll each scoop into a ball with your hands. You should end up with about 40 balls, depending on the size you make.
  • Prepare the Toppings: Choose your favorite toppings to roll the balls in. Here are some options:
