This keto chicken salad stands out with warm pesto chicken over crisp chopped vegetables, giving you a fresh low-carb lunch or light dinner that is light, colorful, and full of flavor.
Pesto Chicken
Cut the chicken breast into bite-size pieces.
8 oz chicken breasts
Heat the olive oil in a frying pan over medium heat.
1 Tablespoon olive oil
Add the chicken pieces and cook for 2 to 3 minutes, stirring now and then, until the outside is no longer pink and starts turning white.
Add the pesto sauce and continue cooking for 5 to 7 minutes, stirring to coat the chicken, until it is fully cooked through.

The chicken is done when the internal temperature reaches 165 F. Set the pesto chicken aside for a minute.
Salad
Rinse the lettuce, green onions, bell pepper, cucumber, and tomatoes in cold water.
2 cups Iceberg lettuce , 1/2 cup green onions, 1/2 cup bell pepper, 1 cup Cucumber, 1 cup tomatoes
Chop the vegetables and add them to a large bowl.
Optional: If desired, season the vegetables with salt, black pepper, olive oil, and apple cider vinegar.

For the best flavor and texture, cook the chicken fresh and serve it slightly warm over the cold salad vegetables.

If you are making this keto chicken salad ahead, keep the pesto chicken and chopped vegetables separate until serving so the salad stays crisp.

Rotisserie chicken or leftover chicken works for a faster version, but freshly cooked chicken gives you the nicest pesto coating.
