That’s what this high protein low carb Pancetta Broccoli Cottage Cheese Frittata promises, a symphony of flavors that will tantalize your taste buds and keep you satisfied until your next meal.And the best part is, this keto frittata is only 6 g net carbs and 30 g protein.

Ingredients

  • 4 large eggs, room temperature
  • 1/4 cup cottage cheese
  • 1 tablespoon parmesan cheese
  • 1/2 cup cheddar cheese
  • 1/2 cup diced pancetta
  • 1 cup fresh broccoli florets, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup onion or green onions, chopped
  • 1/2 cup parsley, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil or butter for cooking

Instructions

  • Preheat your oven to 375°F (190°C).
  • Finely chop all the vegetables.
  • Heat a bit of olive oil or butter in an oven-safe skillet or cast iron skillet over medium heat to medium-high heat. Add the pancetta and cook until it’s crispy and golden brown.
  • Add the broccoli, onions, salt, and black pepper to the skillet and sauté for a couple of minutes.
  • Add the peppers to the skillet and sauté for a couple of minutes.
  • In a large bowl, whisk together the eggs, cottage cheese, parmesan cheese, and parsley.
  • Pour the egg mixture over the pancetta and broccoli in the skillet. Sprinkle the shredded cheese on top.
  • Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and the cheese is melted and slightly golden.
  • Remove the healthy breakfast casserole from the oven, let it cool for a few minutes, then slice and serve.

Notes

  • If you don’t have an oven-safe skillet, you can cook the veggies and pancetta on the stove, then transfer to a baking dish before adding the egg mixture and baking.
  • Feel free to swap the pancetta with bacon, turkey bacon, or even a vegetarian option like smoked tofu for a different twist.
