This Bulgarian dish is typically made with phyllo pastry and filled with cheese and eggs, but my version is low-carb and keto-friendly. Keto banitsa is perfect for breakfast, brunch, or as a snack any time of the day.
Get Recipe Ingredients
Preheat your oven to 430°F (220°C).
In a large mixing bowl, combine all the ingredients: eggs, psyllium husks, crème fraiche or yogurt, feta cheese, Cheddar cheese and baking powder. Stir thoroughly until the mixture is uniform and smooth.
Allow the keto dough to rest for 10 to 15 minutes at room temperature.
Next, line a baking sheet with parchment paper and spread the dough into a thin, even layer.
Transfer the dough to a pizza tray or other oven proof tray. Press the dough into the bottom and sides of the dish to form a crust.
Bake the keto bread for 12-15 minutes, or until it’s golden brown and slightly crispy around the edges.
Let it cool for a few minutes before slicing and serving. Enjoy it warm or cold, as you prefer.
