Ingredients

Instructions

  • Preheat the oven to 220°C (425°F) and place a small amount of beef dripping in each of the 6 muffin cups. Put the muffin tray in the oven to heat up the oil.
  • Warm up the milk in a small bowl and stir in the psyllium husk. Let it sit for 10 minutes until it gets thick.
  • In another bowl, whisk together the other dry ingredients.
  • Crack the eggs and add them to the dry ingredients. Mix everything well until smooth.
  • Pour in the psyllium husk and milk mixture and give it another good stir.
  • Carefully remove the muffin tray from the oven and divide the batter evenly among the 6 muffin cups. The oil should be very hot and sizzling, so be careful not to burn yourself.
  • Return the muffin tray to the oven and bake for 20 to 25 minutes, or until the gluten-free Yorkshire puddings are risen, golden brown, and crisp on the edges. Do not open the oven door while baking, as this will cause them to collapse.
