This delicious and simple Keto Strawberry Mug Cake is perfect when you want a sweet treat in a hurry. Here’s how to make it.
Get Recipe Ingredients
To ensure a light and well-risen cake, first mix together the dry ingredients: coconut flour, baking powder, sweetener, and desiccated coconut in your chosen mug. This dry mixture ensures even distribution of the baking powder, helping your cake to rise evenly.
1 tbsp Coconut Flour, 1/4 teaspoon Baking Powder, 1 tbsp Swerve, 1 tbsp Desiccated Coconut
Add in the egg, Vanilla extract, and melted coconut oil. These will make up the wet section of your ingredients.

Mix the wet and dry ingredients together using a fork or a mini whisk, ensuring all ingredients are thoroughly combined. *see notes. Top with strawberries and sprinkle desiccated coconut. Push the strawberries into the mix.

Set your microwave on high and microwave your mug cake for about 90 seconds. However, as microwave strengths can vary, it’s wise to initially check the keto mug cake after 1 minute. *see notes
- Desiccated Coconut: you can omit it if you do not like coconut.
- Mixing the wet and dry ingredients: To gain a light and fluffy mug cake, avoid over-mixing as this can result in a dense cake. The aim is to just combine the ingredients, so stir gently until you can’t see any dry flour.
- Mixing the wet and dry ingredients: if you can beat the egg white separately, it will make the cake even fluffier. As this is a quick and easy recipe, this step is optional.
- Perform a quick test to determine if your mug cake is done. At the end of your cooking time, insert a toothpick into the centre of the cake. If it comes out clean, your cake is done. If there’s batter on the toothpick, give your cake another 10 to 15 seconds in the microwave before performing the toothpick test again.
- To store any leftover Keto Mug Cake, let it cool down completely first. Then, transfer it to an airtight container and store it in the refrigerator for up to 3 days. To reheat, microwave it for 15-20 seconds until warm.
- You can cook the mug cake in a preheated oven to 440F/220C for 12-15 minutes.
