- 1/2 cup full-fat cottage cheese
- 1/4 cup sliced tomatoes
- 1/4 cup bell peppers
- 1/4 cup mushrooms
- 1 tablespoon olives
- 1/4 cup shredded mozzarella cheese
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder

Mix the cottage cheese with Italian seasoning and garlic powder in a microwave-safe mug or dish. If you’re not a fan of the cottage cheese texture, give it a quick blitz with an immersion blender first.
