  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • Blend the wet ingredients: In a blender or food processor, add the cottage cheese first and blend until smooth. Then, add the eggs and melted coconut oil (or butter). Blend again until everything is well mixed.
  • Combine the dry ingredients: In a large bowl, whisk together the coconut flour, baking powder, salt, and xanthan gum (if using). Make sure there are no lumps.
  • Mix the batter: Slowly pour the wet mixture into the bowl with the dry ingredients. Stir gently until everything is combined. The batter will be thick, which is normal.
  • Bake: Pour the batter into the prepared loaf pan. Use a spatula to smooth the top. Bake for 40-50 minutes. To check if it’s done, insert a toothpick into the center. If it comes out clean, the bread is ready.
  • Cool and serve: Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
