Ingredients

  • full-fat cottage cheese
  • eggs
  • coconut flour
  • baking powder
  • salt
  • coconut oil or butter
  • xanthan gum (optional, for better texture)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Blend the wet ingredients: In a blender or food processor, add the cottage cheese first and blend until smooth. Then, add the eggs and melted coconut oil (or butter). Blend again until everything is well mixed.
  3. Combine the dry ingredients: In a large bowl, whisk together the coconut flour, baking powder, salt, and xanthan gum (if using). Make sure there are no lumps.
  4. Mix the batter: Slowly pour the wet mixture into the bowl with the dry ingredients. Stir gently until everything is combined. The batter will be thick, which is normal.
  5. Bake: Pour the batter into the prepared loaf pan. Use a spatula to smooth the top. Bake for 40-50 minutes. To check if it’s done, insert a toothpick into the center. If it comes out clean, the bread is ready.
  6. Cool and serve: Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
