Crispy, cheesy, and flourless, this keto chaffle pizza is the quickest way to satisfy your pizza cravings without the carbs. Made with just egg, shredded mozzarella, and your favorite toppings, it’s the perfect low-carb pizza crust ready in under 10 minutes.

Instructions

  • Preheat your waffle maker (a Dash mini waffle maker works perfectly).
  • Mix the egg, mozzarella, and seasoning in a small bowl until well combined.
    1 large egg, 1/3 cup shredded mozzarella cheese, 1 teaspoon dried basil, 1 teaspoon dried oregano, 1 teaspoon dried parsley
  • Cook the chaffle batter in the waffle maker for 2–3 minutes until golden and crisp.
  • Top with pepperoni, bell pepper, cheddar cheese (and marinara if using).
    4 small slices pepperoni, 1 tbsp bell pepper, 1 tbsp cheddar cheese
  • Cook again for 2–3 minutes, until the cheese is bubbly and toppings are set.
  • Sprinkle with fresh herbs if desired, then serve hot.

Notes

  • Use pre-shredded mozzarella cheese (the drier, low-moisture kind). Fresh mozzarella will release too much liquid and make your chaffle soggy.
  • Always preheat your waffle maker to help your chaffle cook evenly and crisp up properly.
  • Don’t overload with toppings - too much can make the base soft instead of crispy.
  • To meal prep, cook plain chaffles and store in the fridge for 2–3 days. Reheat and top with fresh ingredients before serving.
