These scrumptious egg muffin cups without almond flour are the ideal choice for anyone adhering to a keto diet or low-carb lifestyle for busy mornings meal prep.
Preheat your oven to 350°F (180°C).
Lightly grease a muffin pan or line with silicone muffin cups.
Halve the cherry tomatoes and thinly slice the sweet peppers.
8 cherry tomatoes, 4 tablespoons red bell pepper
Line each muffin cup with 1 slice of pepperoni, pressing it to the sides to create a cup-like shape. This acts as the outer layer to hold everything in place.
