This keto mug cheesecake chocolate strawberry recipe is a microwave recipe that you can whip up in minutes with simple ingredients. It has four layers of yumminess: a crunchy almond flour crust, a creamy cheesecake filling, a tangy strawberry jam, and a decadent chocolate topping. It’s low-carb, gluten-free, and sugar-free, but it tastes amazing.

Instructions

Keto Cheesecake Crust Layer

  • Combine all the ingredients in a coffee mug or ramekin and microwave for 1 minute.
  • Refrigerate while you prepare the other layers.

Keto Cheesecake Layer

  • Add all the ingredients to a small bowl and mix well with a hand mixer, food processor or a fork.
  • Pour the batter over the crust and microwave for 2 minutes or until set as cooking time may vary depending on your microwave.
  • Refrigerate while you prepare the other layers.

Keto Strawberry Jam Layer

  • Add all the ingredients to a microwave-safe bowl or mug.
  • Microwave for 1 minute or until the strawberries are soft.
  • Stir/mash the strawberries with a fork. If needed, microwave again until it resembles a jam.
  • Pour over the cheesecake layer and refrigerate while you prepare the other layer.

Keto Chocolate Topping Layer

  • Melt the chocolate chips and coconut oil in a small bowl or mug in the microwave for 15 seconds. Stir and repeat until smooth.
  • Pour over the strawberry jam layer and refrigerate the keto mug cheesecake for a couple of hours or until firm. 

Notes

Adjust the sweetener for the jam depending on how sweet are your strawberries.
