These keto flaxseed cottage cheese chips are a low-carb, high-protein snack with just 0.3g net carbs per chip! Made with only two simple ingredients, they’re gluten-free, grain-free, and perfect for dipping or snacking. While they aren’t the crunchiest chips, they make up for it with a delicious nutty, cheesy flavor and healthy fats!

Instructions

  • Blend the cottage cheese and flaxseed meal in a food processor (or use an immersion blender) until smooth.
    1/2 cup full-fat cottage cheese, 1/4 cup flaxseed
  • Spread the blended mixture thinly onto a baking sheet lined with parchment paper using a spatula.
  • Sprinkle with your favorite seasonings, such as garlic powder, bagel seasoning, or sea salt.
    1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp sea salt
  • Bake in a preheated oven at 300°F (150°C) for 15–20 minutes, or until golden brown and set.
  • Cool completely on a wire rack, then break into individual chips and enjoy!

Notes

  • Thinner chips = crispier chips – Spread the mixture as thin as possible before baking.
  • Cool completely – Let them cool on a wire rack to help them firm up.
  • Store properly – Keep in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
  • For extra crunch – Reheat in an air fryer at 300°F for a few minutes before serving.
