This creamy, zesty keto lemon fluff blends in under 5 minutes with just 4 ingredients. No gelatin, no baking. It’s the light, spoonable treat your summer macros will love.

  • Add cottage cheese to a high-speed blender or food processor. Blend until smooth.
    1/2 cup full-fat cottage cheese
  • Add heavy cream, lemon juice, lemon zest, and sweetener.
    1/2 cup heavy cream, 1 teaspoon lemon zest, 3/2 tablespoon lemon juice, 3/2 tablespoons Swerve
  • Blend again until thick, creamy, and fluffy.
  • Scoop into small jars or bowls.
  • Chill for at least 30 minutes before serving.
  • Optional: top with whipped cream before serving.

Notes

  • For silky texture, blend thoroughly until no curds remain.
  • Chill overnight for extra fluffiness and structure.
  • Want it tangier? Use part Greek yogurt instead of all cottage cheese.
  • Not freezer friendly. Store in the fridge up to 3 days.
