In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to bloom. This helps it dissolve properly and ensures your mousse sets with the right texture.
1 teaspoon Gelatin, 3 tablespoons water
In a high-speed blender, food processor, or using an immersion blender, combine the cottage cheese, cocoa powder, heavy cream, sweetener, and the bloomed gelatin. Blend until completely smooth and creamy.
