Add strawberries, sweetener, lemon zest, and juice to a small saucepan.
1 cup strawberries, 1 tablespoon Swerve, 1 teaspoon lemon zest, 1 tablespoon lemon juice
Heat on medium heat, stirring often.
Use a potato masher to mash the berries as they soften.
Simmer the mixture gently for 10 to 12 minutes until reduced and glossy.
Remove from heat. Let cool to room temperature.
Transfer to a mason jar or an airtight container. Chill to thicken.
