Melt the chocolate: In a safe bowl, use the double boiler method or microwave to melt the dark chocolate and coconut oil until smooth.
Prepare the peanut butter filling: Mix the peanut butter, Swerve, and vanilla extract until well combined.
Assemble the cups: Pour a small amount, about 1/3 of melted chocolate, into the bottom of muffin cups lined with paper liners. Freeze for 5-10 minutes until set.
