Heat olive oil or butter in a large pot over medium heat
2 tbsp olive oil
Add chopped onion and garlic, sauté 5 minutes until soft
2 cloves fresh garlic, 1 small onion
Stir in pumpkin puree, broth, and spices
15 oz pumpkin puree, 2 cups chicken broth, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground ginger, 1/4 teaspoon Salt, 1/8 teaspoon black pepper
Bring to a boil, then reduce heat and simmer 10 minutes
Add coconut milk or cream, salt, and pepper

Simmer 5 more minutes, then blend until smooth using an immersion blender
