Creamy, nutty, and high in protein, this keto pistachio ice cream is made with cottage cheese, no pudding mix, and no added sugar.
Add pistachios to a food processor. Blend until finely ground.
1/3 cup pistachios
Add cottage cheese, almond milk, coconut oil, allulose, vanilla, and sea salt. Blend until smooth.
1 cup full-fat cottage cheese, 2 tablespoons coconut oil, 3/4 cup almond milk, 3 tablespoons Allulose, 1/2 teaspoon Vanilla extract - sugar free, 1 pinch sea salt
Pour the mixture into a Ninja Creami pint container. Secure the lid.
Freeze flat for 24 hours.
After freezing, place the container into the outer bowl. Lock the lid and insert into the Ninja Creami.
Press the "Lite Ice Cream" button. After the first spin, check texture.
If crumbly, press "Re-Spin" once or twice until smooth and scoopable.
Optional: Fold in crushed pistachios or sugar-free chocolate chips using the Mix-In function.
