Add cottage cheese to a food processor or blender. Blend until completely smooth.
1/2 cup full-fat cottage cheese
Add the rest of the ingredients and blend again until combined.
1/2 cup heavy cream, 2 teaspoons lemon zest, 2 tablespoons lemon juice, 3/2 teaspoons Swerve, 1/2 teaspoon Vanilla extract - sugar free, 1/2 teaspoon Gelatine
Spoon or pour the mousse into 2 glass jars or dessert cups.
Chill in the fridge for at least 1 hour.
