Creamy, tangy, and done in 5 minutes, this keto lemon mousse with cottage cheese is your go-to for quick, high-protein, sugar-free comfort.

  • Add cottage cheese to a food processor or blender. Blend until completely smooth.
    1/2 cup full-fat cottage cheese
  • Add the rest of the ingredients and blend again until combined.
    1/2 cup heavy cream, 2 teaspoons lemon zest, 2 tablespoons lemon juice, 3/2 teaspoons Swerve, 1/2 teaspoon Vanilla extract - sugar free, 1/2 teaspoon Gelatine
  • Spoon or pour the mousse into 2 glass jars or dessert cups.
  • Chill in the fridge for at least 1 hour.

Notes

  • For best results, use full-fat cottage cheese and blend until no grainy texture remains.
  • If you prefer a firmer mousse, let it chill overnight.
