Indulge in keto-friendly, gluten-free, high-protein gingerbread bonbons. Made with almond flour, cottage cheese, and warm spices, these low-carb treats are sugar-free and diabetic-friendly, perfect for the holiday season.

  • Blend the Ingredients: In a food processor, blend cottage cheese, almond flour, spices (ginger, cinnamon, nutmeg, cloves), powdered sweetener, and vanilla extract until the mixture is smooth and well combined.
  • Form the Bonbons: Using a measuring teaspoon, scoop the mixture and form it into small balls. This helps with portion control and ensures even sizes. Place them on a cookie sheet or piece of parchment paper.
  • Freeze: Freeze the bonbons for about 30 minutes to firm them up for dipping.
  • Melt the Chocolate: In a small bowl, melt the dark chocolate with coconut oil. You can do this in short bursts in the microwave or over low heat on the stove. Stir until smooth.
  • Dip & Coat: Using a fork or skewer, dip each frozen bonbon into the chocolate mixture, ensuring they are fully coated. Let the excess drip off before placing them back on the cookie sheet lined with parchment paper.
  • Let it Set: Allow the bonbons to rest until the chocolate coating is firm. You can pop them back into the freezer for a few minutes to speed up the process.

Notes

Note on Adjusting Almond Flour

Depending on the cottage cheese brand you use, the moisture level may vary. 
  • If your mixture is too wet to form balls, add more almond flour, one tablespoon at a time, until the mixture is sticky but able to hold shape. 
  • If your dough is too crumbly, try adding more cottage cheese.

  • Use room temperature ingredients for smoother mixing.
  • Be sure to freeze the bonbons before dipping them in chocolate to help the coating stick better.
  • For an extra festive look, sprinkle some white powder like powdered erythritol on top for a snow-dusted effect.
