These Keto Flaxseed Cottage Cheese Bread Rolls are soft, fluffy, and packed with protein and fiber. Perfect for sandwiches, as a side for soups, or as a snack. Made with almond flour, flaxseed meal, and full-fat cottage cheese, they’re gluten-free, low-carb, diabetic-friendly, and sugar-free. Ideal for anyone following a keto or high-protein diet.

Instructions

  • Preheat the Oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  • Blend Wet Ingredients: Blend cottage cheese, eggs, and melted butter (or olive oil) in a food processor or blender until smooth.
  • Combine Dry Ingredients: Add almond flour, flaxseed meal, baking powder, and salt to the blender. Mix until a thick dough forms. If the dough feels too wet, add 1 tbsp almond flour at a time.
  • Shape the Rolls: Divide the dough into 6-8 portions with damp hands. Shape each into a ball and place on the prepared baking sheet.
  • Optional Toppings: Brush each roll with egg wash and sprinkle with sesame seeds, flaxseeds, or herbs.
  • Bake: Bake for 20-25 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  • Cool and Serve: Let cool on a wire rack for at least 10 minutes before serving.

Notes

  • Dough Too Wet? Add more almond flour, 1 tbsp at a time, until manageable.
  • Crispier tops: Brush the rolls with butter halfway through baking.
  • Flavor Boost: Mix in garlic powder, onion powder, or Italian seasoning for a savory twist.
  • Storage: Store rolls in an airtight container for up to 2 days at room temperature or 1 week in the fridge. Freeze for up to 1 month.
