A creamy, high protein keto cranberry cottage cheese salad made with real cranberries, chopped pecans, and no added sugar. Lightly sweet, low carb, and diabetic friendly - perfect as a festive mini dessert or sweet holiday side.
Combine cranberries, water, and sweetener in a small saucepan. Cook for 5–8 minutes until the berries soften and turn jammy. Remove from heat and cool completely.
1/4 cup cranberries, 1 tablespoon water, 2 teaspoon Swerve (granulated)
Blend the cottage cheese until smooth.
1/2 cup full-fat cottage cheese
Add the heavy cream, sweetener, and vanilla to the blended cottage cheese. Blend until thick and creamy.
3/4 cup heavy cream, 2 teaspoon Swerve (granulated), 1/2 teaspoon vanilla extract - sugar free
Fold in the cooled cranberry base and the chopped pecans. Leave streaks for a swirled look or mix fully for a soft pink salad.
1/4 cup pecans
Chill for 30 minutes so the salad thickens and the flavors settle.
- Sweeteners: Allulose stays the softest. Swerve and erythritol blends may firm slightly as they chill.
- Flavor variations: Add cinnamon, nutmeg, or orange zest for a holiday feel.
- Texture: Add 1 tablespoon extra cream for a softer texture.
- Nuts: Swap pecans for walnuts or skip them for a smoother salad.
- Serving: Four small portions as a sweet side or two richer dessert portions.
