A creamy, cheesy, high-protein keto casserole made with chicken, cauliflower rice, and a flavorful cottage cheese taco sauce. Ready in 40 minutes and perfect for meal prep.

  • Preheat oven to 375°F (190°C). Lightly grease a small casserole dish (about 8×8 inches).
  • In a blender, mix cottage cheese, tomato paste, and taco seasoning. Blend until smooth. Taste and add ¼ tsp salt if needed. Set aside.

  • Chop chicken into bite-sized cubes. Dice bell pepper and onion if not already prepped.

  • In the greased casserole dish (or a mixing bowl), combine the raw chicken, cauliflower rice, bell pepper, onion, blended sauce, and ½ cup of the shredded cheese. Stir until everything is evenly coated.

  • Sprinkle the remaining ¼ cup shredded cheese over the top of the casserole.

  • Bake for 30–35 minutes, until bubbly and golden. Chicken should reach 165°F (74°C) internal temp.

  • Let sit for 5 minutes before serving. Top with taco toppings like green onions, salsa, or guacamole.
