This creamy, high-protein cottage cheese cookie dough is a healthy chocolate peanut butter snack you can eat by the spoonful - no baking needed!

Instructions

  • Add cottage cheese and peanut butter to a blender or food processor. Blend until completely smooth.
1/2 cup full-fat cottage cheese, 2 tablespoons smooth peanut butter (natural, 100%, sugar free)
  • Add cocoa powder, powdered sweetener, vanilla, and salt. Blend again until well combined.
1/4 cup cocoa powder - unsweetent, 3 tablespoons Swerve, 1/4 teaspoon Vanilla extract - sugar free, 1 Pinch salt
  • Transfer to a bowl and stir in almond flour to form a soft cookie dough.
    1/2 cup Almond Flour
  • Taste and adjust sweetness if needed.
  • Chill for 15 minutes before scooping or serving.

Notes

  • For a softer dough, add 1–2 tsp melted butter or coconut oil.
  • To change up the flavor, use almond butter or sunflower seed butter instead of peanut butter.
  • Fold in mini chocolate chips, white chocolate chips, or chopped nuts for texture.
  • Press into a parchment-lined tray and freeze for sliceable squares or sandwich layers.
