This Easy Keto Chicken Gyro Casserole is high-protein, low-carb, and packed with Greek flavors. Perfect for meal prep and quick dinners!

Ingredients

Instructions

  • Slice the chicken into thin strips.
    9 oz chicken fillets
  • Marinate in the Chicken Gyro Marinade with cottage cheese or yogurt in a large bowl. Ideally, marinate for 2 hours, but even 10-15 minutes while prepping will work.
1 cup full-fat cottage cheese, 2 servings Chicken Gyro Ingredients
  • Thinly slice the onion and bell pepper.
1/2 cup onion, 1/2 cup red bell pepper
  • Sauté the onions in butter over medium-high heat until soft and golden. (This step adds extra flavor!)
1 tablespoon butter, 1/2 cup onion
  • Add the bell peppers and the marinated chicken, mixing well.
    1/2 cup red bell pepper
  • Transfer to a casserole dish (or keep in an oven-safe skillet).
  • Bake at 375°F (190°C) for 15 minutes or until the chicken is cooked through.
  • Serve hot with homemade tzatziki sauce or your favorite keto sides!

Notes

  • Use full-fat cottage cheese for a richer, creamier marinade.
  • Blend the cottage cheese for a smoother texture in the sauce.
  • Don’t skip sautéing the onions—this enhances the depth of flavor.
  • For a tangier marinade, add lemon juice and a tsp of lemon zest.
  • Sprinkle with feta cheese before baking for a more authentic Greek flavor.
  • Meal Prep Tip: Store in separate containers for easy reheating throughout the week.
