This soft, fluffy, and comforting keto bread is made without eggs and packed with protein from full-fat cottage cheese and whey protein isolate. Perfect for toast, sandwiches, or snacking—your new favorite low-carb loaf!

Preheat to 175°C (350°F). Line an 8x4 inch loaf pan with parchment paper.
Use a food processor or blender to blend the cottage cheese until smooth and creamy.
3/2 cups full-fat cottage cheese
In a large bowl, whisk together almond flour, whey protein, whole psyllium husk, baking powder, and salt.

Stir in blended cottage cheese, olive oil, and apple cider vinegar. Mix to combine.

Let the mixture sit for 5–10 minutes to thicken.
Spoon the dough into the prepared loaf pan and smooth the top. Sprinkle with sesame seeds if desired.
Bake for 40–50 minutes or until golden brown and a toothpick comes out clean.
Internal temperature should reach 93°C (200°F).
Let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
