This soft, fluffy, and comforting keto bread is made without eggs and packed with protein from full-fat cottage cheese and whey protein isolate. Perfect for toast, sandwiches, or snacking—your new favorite low-carb loaf!

  • Preheat to 175°C (350°F). Line an 8x4 inch loaf pan with parchment paper.
  • Use a food processor or blender to blend the cottage cheese until smooth and creamy.
    3/2 cups full-fat cottage cheese
  • In a large bowl, whisk together almond flour, whey protein, whole psyllium husk, baking powder, and salt.
    3/4 cup whey protein powder, 3/2 cups almond flour, 3/2 tablespoons whole psyllium husk, 3/2 tablespoons baking powder, 1/3 tteaspoon salt
  • Stir in blended cottage cheese, olive oil, and apple cider vinegar. Mix to combine.

  • Let the mixture sit for 5–10 minutes to thicken.
  • Spoon the dough into the prepared loaf pan and smooth the top. Sprinkle with sesame seeds if desired.
  • Bake for 40–50 minutes or until golden brown and a toothpick comes out clean.
  • Internal temperature should reach 93°C (200°F).
  • Let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Store in an airtight container at room temperature for up to 3 days, or in the fridge for a week.
  • Slice and freeze for later - just toast straight from frozen.
  • For best results, use fine almond flour and unflavoured whey isolate.
  • Herbs and spices like Italian seasoning, onion powder, or garlic powder can be added for extra flavor.
