Instructions

  • In a small microwave-safe bowl or microwave-safe mug, melt the butter for the mug cake. Add the egg and vanilla extract and whisk well.
  • Add the dry ingredients: coconut flour, Swerve, cocoa powder, and salt, and mix well until you have a smooth keto batter.
  • Microwave for 90 seconds or until a toothpick inserted in the center comes out clean. The cooking time will depend on the power of your microwave.
  • Let the mug cake cool slightly and then cut it into four round slices.
  • In another small microwave-safe bowl, melt the coconut oil for the filling. Add the almond milk, powdered Swerve, and salt and whisk well. You can use a food processor if you prefer.
  • Take two slices of the mug cake and spread half of the filling on one slice. Place the other slice on top and press gently to make a sandwich. Repeat with the remaining slices and filling.*
