This creamy 2-ingredient pistachio butter blends roasted pistachios with a splash of oil for a velvety, naturally sweet spread. Add pistachios to a food processor or high-speed blender.
1 cup pistachios
Blend on medium speed until crumbly, then scrape down the sides using a rubber spatula. Keep blending, pausing to scrape as needed. The mixture will turn pasty before smoothing out.
Stream in oil 1 tsp at a time, blending until the texture is silky and spreadable. Add a pinch of salt, taste, and adjust.
