This creamy 2-ingredient pistachio butter blends roasted pistachios with a splash of oil for a velvety, naturally sweet spread. It’s a quick, small-batch recipe perfect for high-protein breakfasts, keto snacks, and healthy baking. No added sugar, no fillers, just pure pistachio flavor in every bite.

Instructions

  • Add pistachios to a food processor or high-speed blender.
    1 cup pistachios
  • Blend on medium speed until crumbly, then scrape down the sides using a rubber spatula. Keep blending, pausing to scrape as needed. The mixture will turn pasty before smoothing out.
  • Stream in oil 1 tsp at a time, blending until the texture is silky and spreadable. Add a pinch of salt, taste, and adjust.
    2 teaspoons Olive Oil, 1 pinch salt

Notes

  • For a creamier texture, use freshly roasted warm pistachios.
  • Want a flavor twist? Add a few drops of rose water or vanilla extract for a Middle Eastern flair.
