  • Begin by separating the solidified coconut cream from the liquid in your chilled can of coconut milk.
  • In a mixing bowl, combine the solidified coconut cream, desiccated coconut, and xylitol.
  • Whisk together until well mixed. Taste and add more sweetener if desired.
  • Pour the mixture into a loaf pan or freezer-friendly container.
  • Freeze for about 90 minutes, or until it reaches your preferred consistency.
  • Serve and enjoy a scoop of dairy-free, keto-friendly bliss!

Notes

  • Xylitol will help reduce the iciness (getting too hard). You can use any sweetener you want.
  • Optional: Xanthan Gum – if you are planning to keep the ice cream longer than 24 hours in the freezer, I would recommend you to add 1/8 teaspoon of Xanthan Gum for creamier texture. See more information below.
