  • shredded mozzarella cheese
  • cream cheese
  • medium egg (room temperature)
  • gluten-free baking powder
  • sausages
  • cheddar cheese
  • salt
  • sesame seeds

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking tray with a piece of parchment paper.
  2. In a large bowl, combine the almond flourbaking powder, and salt.
  3. In a microwave-safe bowl, melt the mozzarella cheese and cream cheese together. Stir until smooth.
  4. Add the melted cheese mixture to the dry ingredients. Mix well.
  5. Add the egg and knead the dough until it forms a ball.
  6. Roll out the dough between two pieces of parchment paper to about 1/4 inch thick.
  7. Cut the dough with a sharp knife into 6 rectangles. Place a sausage on each rectangle. Cut each sausage lengthwise about halfway down and fill with cheddar cheese, then roll up.
  8. Place the rolls on the prepared baking sheet. Sprinkle with sesame seeds.
  9. Bake for 20-25 minutes in the preheated oven or until golden brown.

Sausages: I used Italian thin sausages for this recipe. If you use larger sausages, you may end up with fewer than 6 portions, which could affect the nutritional values provided.
