In a high-speed blender or food processor, combine the cottage cheesealmond flourunsweetened cocoa powderSwerve, and dark rum. Blend until the mixture is smooth and creamy.

Scoop out the mixture with a measuring teaspoon for even-sized portions. Roll each scoop into a ball and place it on a baking sheet lined with parchment paper.

Choose your coating:

  • Option 1: Roll each ball in desiccated coconut until fully coated. No need to freeze—just coat and serve!
  • Option 2: Place the shaped balls in the freezer for about 30 minutes to firm up. While they’re freezing, melt 1 cup dark chocolate chips with 1 tablespoon coconut oil using a double boiler or microwave. Once the balls are ready, dip each one into the melted chocolate, ensuring they’re fully coated. Place them back on the baking sheet to set.

Let the chocolate harden (if using the chocolate coating) before serving.
